106 Nguyen Thai Hoc Street, Hoi An, Viet Nam Before our eyes is an array of condiment bowls. They are filled with various ingredients – some familiar, many exotic and colourful. Teaching chef Ms Vy explains, one by one, how each of the vegetables and herbs are used to create everyday Vietnamese or ‘street food’ cuisine. But for us Westerners, this is nothing less than a gourmet experience for the palate, made all the more inspirational because we are learning the art of cooking it for ourselves. The Morning Glory cooking school has garnered a well-deserved reputation over the years for its classes and was the first cooking school established in Hoi An. Owner and founder Ms Trinh Diem Vy is a third generation chef and native of Hoi An whose cooking classes have featured in various publications around the world. A highly passionate individual, Ms Vy has created six cooking class programs to suit all types of interested gastronomes; from beginner, to amateur, to professional. Ms Vy's zeal for recreating street food favourites in the Morning Glory cooking school is driven by a personal desire to keep local recipes alive and her mantra is that "Street food recipes are passed on from generation to generation. I wish to recreate and teach dishes in Morning Glory that will keep the street food experience alive, especially foods which are special to Hoi An," Morning Glory Cooking School ProgramProgram 1: DAILY VIETNAMESE FOOD - COOKING DEMONSTRATION AND MEAL.This 45-60 minute class is ideal for anyone interested in Vietnamese cuisine with limited time. You will have an introduction into the fascinating art of Vietnamese cuisine with a brief talk about the special ingredients & utensils used, then the processes are demonstrated & you have ‘hands- on’ experience of one dish, ‘Fried Spring Rolls’ & their dip , as well as choosing herbs to accompany them. Each step in the process is explained & you get to eat each dish. You also see two dishes demonstrated ~ Green Papaya Salad & Grilled Chicken with Lime Leaves.Program 2: DAILY VIETNAMESE FOOD - HANDS-ON CLASS AND MEALThis 1½ hour session is for those who want a practical hands-on gourmet experience. It includes a talk on the art of Vietnamese gastronomy, vegetables, herbs & spices and how to prepare & use them. The practical includes learning cooking & cutting techniques including how to use a Vietnamese vegetable grater & knife & then you can choose to make a couple of exquisite garnishes. You will get hands-on experience of fresh summer rolls, green papaya salad, fried eggplant with onion & fish in banana leaf & you get to eat them.Program 3: COOKING FOR SPECIAL OCCASSIONS - MARKET TOUR, HANDS-ON CLASS & MEALThis 3 hour session is a rich & comprehensive gourmet experience. You start with a 1 hour market tour to learn about Vietnamese ingredients & how to choose fresh foods. Next is a short talk on the art of Vietnamese gastronomy, vegetables, herbs & spices & how to prepare & use them. The practical includes learning cooking & cutting techniques & how to use a Vietnamese vegetable grater & knife. You will get hands-on experience of fresh summer rolls, grilled chicken with lime leaf, Green Papaya salad, crispy Pancake or cao lau. Sometimes dishes change due to availability.Program 4: CULINARY INTENSIVE FOR THE PROFESSIONALFor Professional Chefs / Chef Apprentices / Chefs of Vietnamese Cuisine / Vietnamese Cultural students / Passionate and Experienced Home ChefsOne 6 hour practical and theory session taught by Ms Vy . This session is for the professional & also those with a passion for & experience of Vietnamese cooking, those who want to add to their skill set & increase their knowledge about Vietnamese cuisine. Subjects covered include ~ choosing ingredients, information on ingredients, techniques, features of Vietnamese food, history & philosophy, nutrition and food medicine. This session will also suit those who want to solve Vietnamese cooking challenges or design menus for their restaurant. 8 Vietnamese dishes prepared and cooked. Program 5: VIETNAMESE STREET FOOD COOKING - DEMONSTRATION AND HANDS-ON CLASS‘Street food’ is not Vietnamese daily food, but eaten as a treat. Learn about this tradition & how to make some of the dishes at our ‘street food’ counter (if you are a small group). All ingredients are pre-prepared, you see a demonstration, then try it yourself and eat it. Recipes are given. Booking in advance & minimum 2 people & maximum 8 required. 1¼ -1¾ hour class including eating as you go. Classes can be held at 8.45-10am, 10.15-11.30am, 2.45-4pm & 4.15-5.30pm at the ‘street food’ cooking counter for 2-4 people. For 5 or more it will take place upstairs in the cooking school and times will need to be arranged.Program 6: A TASTE OF VIETNAMESE COOKING - TALK & HANDS-ON CLASS WITH MARKET TOUR (MARKET TOUR IS OPTIONAL)Learn about Vietnamese family life, eating customs and the women behind the family meal. Learn about fresh local seasonal ingredients, the dishes eaten and how to cook a basic Vietnamese family meal. Also learn how Vietnamese people get their nutrients and create balanced meals with a limited budget. Class includes Vietnamese cutting and cooking methods. Dishes you will cook will be according to the seasonal ingredients available and include ~ a soup, a seafood dish, a cooked vegetable dish, a pickle and rice. Classes are held upon request and take 1½ hours. |
